Arrival Day: Upon your arrival to Ambergris Caye's San Pedro Airstrip, you will be met by our personal resort van driver, Walter, who will warmly greet you and safely transport you to the local marina. From there, Las Terrazas Resort's private boat captains will meet you and take you on the short, informative, and absolutely breathtaking boat ride to hotel via the aquamarine waters of the Caribbean Sea. Places to Worship on Ambergris Caye

We know that many visitors to Belize like to continue worshipping even while on vacation to Las Terrazas Resort, both for their own spiritual nourishment as well as to experience the unique worship styles that present themselves in international contexts. Ambergris Caye is a cultural melting pot in terms of ethnicity and language, and their spirituality and faith practices are no exception. With different customs and cultures comes varying faith backgrounds, and the island's religious diversity is well displayed by its vast array of local congregations. At Las Terrazas Resort, we understand that the guests who walk through our palapa are just as unique and diverse in their spirituality as those who inhabit the island, and we want to make sure our guests have everything they need to nourish their bodies, minds, and souls while away from home. We hope that this list of churches, mosques, and various other places of worship will prove to be helpful as you seek out opportunities to explore and practice your faith while on Ambergris Caye.

One thing to note: because Belize is primarily a Christian country, the information on Protestant and Catholic churches is more accessible and readily available. While various other faith practices do exist and flourish on the island, their information is more easily communicated via word of mouth on the island. As such, feel free to contact our Reservations Office for more information and details concerning your preferred house of worship.

Protestant

Living Word Church, located on Jade Street in San Pedro, is known for having a warm and kind congregation with a pastor who powerfully preaches the Word of God. They deeply care about their community and strive to make an impact on those God has placed them among. Services are offered on Sundays at 10:45am and 7:30pm with opportunities for men and women to fellowship together on Thursdays at 7:30pm and Wednesdays at 7:30pm respectively. Kids' Sunday School and nursery classes are also available on Sundays. Our very own Head of Dining, Noreen Thomas attends this congregation so be sure to wave hello if you see her!

Sagebrush Church is another non-denominational Christian church on Ambergris Caye. With live worship, children's programming, and on-site pastoral staff available to answer your questions and assist you in an authentic worship experience, Sagebrush is another great option for Protestant church goers. Located on Laguna Drive, Sagebrush offers worship services on Sundays at 9:00am and 10:30am as well as on Tuesdays at 7:00pm. Children's programming for ages 6 weeks through 11 years old are offered at all three services.

Catholic

The majority of Belizeans are Catholic and as such there is a predominant Catholic church on the island. For more unique and picturesque island ambiance, check out San Pedro Roman Catholic Church. Located right on the beach, this beautiful faith community offers an exceptionally spiritual experience as the relaxing sound of the crashing waves nearby enhances your time of worship.  Daily Mass is offered in English on Monday thru Saturday at 7:00am. Sunday Mass is offered at 8:00am and 10:00am (English) and 7:00pm (Spanish).

Islam

Muslim worshippers can find Masjed Al-Akramin in San Pedro Town. Here you can gather alongside the island's Muslim congregants for the five daily prayers or attend a Friday congregation sermon. Though information about this community is sparse online, our Front Desk team would be happy to contact the local Imam to let him know of your arrival and to best accommodate your spiritual needs while on the island.

Church of Latter-Day Saints

The Church of Latter-Day Saints has more recently opened their doors in the old Blue Rails Condos right on the beach. Located on the corner of Sea Grape and Coconut, this LDS Branch offers English services on Sundays at 10:00am.

Jehovah's Witness

Located on Sea Grape Drive in San Pedro Town, this Jehovah's Witness community offers services in Kriol, English, and Spanish, appealing to the various Belizeans who inhabit the island. Worship times are as follows:

Kriol - Tuesdays at 7:00pm and Saturdays at 5:00pm

English - Thursdays at 7:00pm and Sundays at 10:00am

Spanish - Wednesdays at 7:00pm and Sundays at 6:30pm

Meditation

For those who do not find it necessary to seek out a local congregation, but still prefer to set aside a time of quiet meditation and reflection, consider practicing yoga on Las Terrazas Resort's beachfront property. Yoga mats are provided in each room and our ever-efficient staff would be happy to arrange a private lesson (single or group) for you on Las Terrazas Resort's signature dock that overlooks the Caribbean Sea.

Planning A San Pedro Belize Wedding

If you are looking for information on our seamless beach destination wedding process and the staff member who makes those dreams come true, then look no further. We are pleased to introduce Carolyn Stone, Director of Sales!

Having been on staff for more than 10 years, Carolyn knows the ins and outs of both Las Terrazas Resort and Ambergris Caye and all that it takes to host fabulous group parties and events on our Caribbean beach front property. She is commonly referred to as a "Wedding Coordinator" by the couples who choose to marry in Belize, but her actual title is Director of Sales and Marketing for Las Terrazas Resort. She wears many hats throughout her work day, including Director of Sales and Marketing, where she is responsible for daily sales efforts and digital advertising; Revenue Manager, in which she oversees the Reservations Team and manages all room rates and inventory; and Group Sales and Events Manager, where she secures group contracts and plans all events. Carolyn has twenty years of experience in the hospitality industry, coordinating large scale events such as Cirque du Soleil to much smaller anniversary and family dinners, including serving as the Director of Catering for a 4-star hotel in Houston.

Carolyn is based in our Houston office (a great place to work, although it doesn't have to same view as the beachside office in Belize!), where she creates events in conjunction with wedding couples or corporate clients along with our team on Ambergris Caye, Belize. The event planning process is so thorough and efficient that as the date of the event nears, Carolyn is able to seamlessly pass it off to our experienced Las Terrazas Resort team. Before your plane lands in Belize, our General Managers, Assistant General Manager, Housekeeping, Chef, and Food and Beverage Manager will be prepared to perfectly execute your dream wedding.

In addition to coordinating with the event staff at Las Terrazas Resort, Carolyn also collaborates with vendors on all the details such as entertainment, photography, flowers, and more. Often times these working relationships turn into personal friendships, like the one that Carolyn and Olivera Russo share. As a photographer who shoots many weddings here at Las Terrazas, Oli says:

"I met Carolyn Stone years ago, and I was struck by her professionalism and the way she was involved in her business. I love working with people who are dedicated to their work, who care about the smallest details, and who are always checking what I need to make things better. We constantly chat about our weddings and events, and when we meet in person, we constantly talk about our work.

We know that some couples might be concerned to hear that their wedding planner is not actually on site for their big day, and we want to alleviate those fears. What begins with a thorough questionnaire evolves into a detailed Banquet Event Order that subsequently allows for plenty of emails, phone calls, and conversations to follow in order to plan the most spectacular and intimate weddings. Additionally, Las Terrazas Resort is actually known for hosting the largest weddings on Ambergris Caye. What makes them so truly successful is that Carolyn and the team are in constant communication during the planning process as well as while the event is taking place. Despite her absence during the beachfront ceremonies, the resort team is faithful to send Carolyn photos, videos, and updates that allow her to manage the details from afar if need be.

If Carolyn's resume and experience are not enough to quell any doubts you may have about planning a wedding remotely, we know a bride's perspective sure will. Carolyn is known for her personal interest in the couple and often arranges to meet with brides to hear their wedding dreams in person. Amy Dauble-Madigan married in Belize in June of 2017 (read all about why they chose Las Terrazas Resort for their destination wedding here and had this to say about working with Carolyn:

"Carolyn went above and beyond for us, making everything unique to what we wanted for our special day and our special vacation with family. We never felt like there was a delay in communication or that we couldn't let Carolyn know our requests. It was very customized, but also with nice suggestions from someone who has been doing this for so long! Carolyn knows the lay of the land, how things work, what her team can do and she's also confident, which makes you feel like everything will go seamlessly. We never felt like her being a long-distance coordinator lacked detail or confusion once we got there on wedding day.

Cooking with Chef Nolvin

O Restaurant is run by the talented Chef Nolvin Catalan who brings a combination of personal passion and skillful expertise to the table. Guatemalan by birth, Chef Nolvin's family fell in love with Belize while on vacation and made Belize their own by the time he was just one year old. A chef for more than half of his life, Nolvin began cooking at just fifteen years of age. What started off as just personal interest, Nolvin began without any training and learned kinesthetically through his own hands on experience. He began his hospitality caareer as a dishwasher, where he continued cultivating a love for all things culinary and was thankful for small opportunities to prep simple dishes such as salad and pizzas. From there, his opportunities grew; he earned a culinary certification upon completing a six-month course at the Belize City Center Institution of America. As a part of his formal training, he had to cook for and complete written tests to be approved by the American chefs who ultimately certified him. From there, his opportunities grew, and he soon found himself working and cooking for the renowned Francis Ford Coppola. He was brought on as a chef at one of Coppola's many luxe resorts, the Blancaneaux Lodge, where he worked for the next seven years. He later enjoyed a short stint at the San Ignacio Hotel Steak House before joining the Las Terrazas Resort family where he has remained for the past eight years.

Having been the Executive Chef now for the past two years, Nolvin is finding his rhythm in the O Restaurant kitchen. Despite his title, he does not see himself as above the cooks he manages, but rather loves being behind the stove himself. Though he oversees a staff of 11, he is known for working among them rather than over them and spends the majority of his days inside the kitchen doing hands on cooking alongside his team. He has a special affinity for Italian cooking, which is seen displayed throughout his menu choices. He loves homemade pasta and makes it fresh every day; his signature seafood risotto and goat cheese ravioli rival those found in Italy! He wants guests to Ambergris Caye to experience true, authentic Belizean cuisine, so his menu items focus on Central American and Belizean fare with daily specials that showcase his talent. A true Chef, he would emphatically argue that everything fresh is better, so his locally sourced and freshly caught menu items are made right to order. Rather than ascribing to the adage that "Chefs know best" and that their dishes should never be modified, Chef Nolvin prides himself on catering to his patron's preferences.  He makes fish to order, considers guests' allergies, and allows guests to create their own dishes that he promptly sets into motion in the kitchen. He loves to be kept on his toes and thrives off of the challenge he receives when guests have a hard time deciding what to order and ask him to surprise them!

Hands down, Nolvin's favorite part of his job is dinner time at the hotel. The atmosphere is fun and lively, and he enjoys coming out from behind the stove to meet guests and make sure they are enjoying their food. His hope for all guests of Las Terrazas Resort is that they would have a fabulous and relaxing dining experience, enjoy their stay in our boutique beach resort, and experience all the country has to offer, from the Mayan ruins to the Barrier Reef and diving below the aquamarine waters just off our property.

Chef Nolvin is known for his fun and playful cooking style. Though he is without a doubt a fine dining chef, he also brings personality and fun to his kitchen. He does so much more than just offer an elegant dining menu but is often hosting fun Pop Up events for the Las Terrazas Resort community. For example, Nolvin hosts a roof top dining event at the hotel called Taste of Central America; presenting as a tasting bar (complete with a complimentary Belikin Beer!), you can sample the classic dishes of our neighboring Central American countries. Friday nights are Sushi Night, where he loves to hand prep sushi himself. Sushi Night features everything from tuna, salmon, eel, unagi, lobster, and lobster rolls. Chef Nolvin is also known not only for setting up a Crepe Station for guests, but also for offering cooking classes for resort guests. He even spices things up by making his very own hot sauce for the restaurant (ask us how you can take some home!). Truly his presence in the kitchen and among resort guests make this Chef one who stands out from all the rest.

We can't go without mentioning that Chef Nolvin is also intimately involved in our Belize wedding packages. All our destination weddings and special events include menus prepared by Chef Nolvin and his culinary team.  While we offer a full array of Banquet and Catering Menus, many of our brides ask for customized menus exclusively for their special event. Along this same vein, our Private Beach Dinners for 2 (or small groups) have hand selected menus by Nolvin as well. This intimate dining option features a custom three course menu created by Chef Nolvin with input from the guest of their likes and dislikes.  It includes their choice of red or white wine to compliment the dinner.  Couples or small groups will be graced with the presence of their very own private dedicated server attending to their needs.  As this dinner is so popular, it should be booked in advance. Please note that we accept no more than two per evening.

Well known throughout Ambergris Caye, Chef Nolvin gets nothing but rave reviews. His blackened fish is a popular fan favorite as well as his curried fish over coconut rice. A simple TripAdvisor search will show that he is a beloved and favored chef by all who encounter him on Ambergris Caye. Reviews claim that he works magic in the kitchen and goes above and beyond in impressing guests by cooking up their fresh catch. Despite working in a humid environment with outdoor seating, Chef Nolvin overcomes the challenges with humility and grace. He serves his food right away so it stays fresh and hot and even manages to get decadent desserts on the table without them melting on the way. Those who know the Ambergris Caye's humidity will understand the culinary challenge, but Chef Nolvin does it well and even his most chilled and refreshing desserts are able to make it to guests intact; though the fact that they are so scrumptious and easily scarfed down surely attributes to this as well.

On his less hectic days off, Chef Nolvin enjoys relaxing at home and spending time with his family. His much-needed days off allow him to focus on taking care of his wife and kids and doing what he does best - cooking for them. But lest you think this fine dining chef pulls out the works for his family, he is quick to tell you who the boss really is, laughing as he says that it is his five-year-old son who runs the menu at home! While he is known for his exquisite flare and fine dining dishes at O, he finds cooking at home to be much different. There he sticks to cool, local fare like fresh tortillas, savory cooked beans, and enjoys a traditional wood burning stove called a Fogon where he cooks beans and corn that are infused with a nice, smoky flavor. Aside from relaxing at home, spending time with and cooking for his family, Chef Nolvin also enjoys having beach barbeques and fishing. In fact, he is known to fish right off the famed Las Terrazas Resort dock and heading back to the O restaurant kitchen where he cooks his catch, noting that baked or fried fish is his favorite. He is also quite the humble servant, known for spending his time cleaning up the island amongst others in the Las Terrazas Resort family.
